Healthy Apple Crisp

It's that time of year, when the holidays are looming and you are looking at your pants begrudgingly. You know what I mean, the overload of delicious food is starting to (quite literally) weigh on you. We are hardwired to want to enjoy our holidays with friends and family, yet we often go slightly (okay WAY) overboard on the food we eat. Now don't get me wrong, I love eating Christmas cookies, pumpkin pie, and my fair share of mashed potatoes. However, I also love challenging myself in the kitchen AND sharing it with all of you. So I decided this holiday season, I am going to be challenging myself to come up with creative ways to make our favorite holiday recipes healthier. Okay, now to the good stuff. By that, I mean dessert. This girl is a sweets and carbs junkie, donuts are my favorite food group after all. BUT, my waist line does not appreciate constant sugar intake, and neither does my energy levels or blood sugar problems. This apple crisp recipe uses only natural sweetener, but you would never know that. Justin LOVES it, and it only takes 25 minutes to whip up. My best suggestion? Get a good apple peeler, a few good baking apples, and make this......now.

 

Ingredients 

Filling

  • 4 Medium baking apples

  • 2 T pure maple syrup

  • 1 tsp cinnamon

Topping

• 1/2 cup old fashioned oats (I used GF) 
• 2 T coconut flour 
• 2 T coconut oil 
• 1 T Pure maple syrup 
• 1/2 tsp cinnamon 
• 1/4 cup chopped pecans 

 

1) Preheat oven to 375* 
2) Mix chopped apples (I peeled mine), maple syrup and cinnamon in a small, glass baking dish
3) In a seperate bowl, mix the ingredients for the topping and sprinkle over apple mixture
4) Bake for 25-30 minutes, or until apples are tender 
5) Serve warm, with a scoop of vanilla ice cream if you are like Justin 😜

 

Enjoy! For all my fixers out there, this ends up being 1 purple, 1 yellow, and 1 tsp. Aka, its totally worth it and amazing. Go get yourself a good apple peeler.....and make this for dessert tonight!
